Homemade Gourmet Mini Pecan Muffins/Bars

THIS IS A WINNER MIX in my family!

This mix you can bake 2 ways. One as mini muffins and the other as bars cooked in an 8x8 pan.

I chose to try the Bars.

1 Homemade Gourmet Mini Pecan Pie Muffin Mix
2 eggs, beaten
1 stick butter, melted (if you substitute margarine for butter, muffins are more cake-like, without caramelized butter flavor ) --- I used margarine and it was great!

1. Preheat oven to 350 degrees.
2. Stir all ingredients together in a mixing bowl until blended.
3. Spray an 8x8 pan with flour based cooking spray.
4. Pour batter into pan.
5. Bake 20 minutes.
6. Cool completely before cutting into small bars.

YUM!!  If you love pecan pie, you'll love the bars.

I have a Homemade Gourmet Seasoning Mix....now what?

Since I am really new to Homemade Gourmet, I'm having to slowly figure out what to do with all my new seasoning mixes!  (You should see my pantry OMG...it's Homemade Gourmet Central! ---if you want to buy something to try it out, I'm sure it's in my pantry!)

Okay, so I'm in what I call the "Test Kitchen" phase.  I want to try out recipes with all the seasoning mixes to see what is my favorite or a family favorite.

I search through the recipe database depending on what seasoning I have. Then I look to see what sounds good. Then I go on a bulk meat shopping spree. Because I wanted to prep the meals for my freezer and get it done in one day and eat them later. (I LOVE DOING THIS! If you haven't done this yet, call me and we'll do it together next time.....you will be so thankful you did.)  I just put 9 meals in the freezer in less then 30 minutes. LOVE IT!

Grandma's Sunday Roast Chicken

I tried this recipe and it was a WINNER! (Be sure to read the entire blog for my leftover idea...it was even better.)

6 Boneless, Skinless Chicken Breast
4 Tablespoons Grandma's Sunday Roast Seasoning Mix
1 - 10 oz can Cream of Chicken Soup
1/2 soup can of water
1 gallon freezer bag


Place all ingredients inside the gallon freezer bag and squish it all around to get seasoning and soup mixture mixed well.

You can freeze it or cook it now. I made a batch and froze it but when I decided to make it I put the frozen ingredients straight into my crockpot and cooked it on low for the day or on high for 6-8 hours.
When it was nice and tender, I thickened the sauce to make a gravy. I served it with egg noodles and a vegetable would have been wonderful with mashed potatoes!

How did I serve it?
I served mine with egg noodles and corn and thickened the sauce to make gravy. This would also be great with mashed potatoes.

What did I do with my leftovers?
I made a chicken pot pie!
You will need:
  • 2 pie crusts
  • 1 can cream of chicken soup
  • 1/2 cup milk
  • left over corn
  • 1 can whole green beans, drained
  • left over Grandma's Sunday Chicken cut into bite size pieces and sauce

  • Roll one pie crust out onto a pie plate.
  • In a medium bowl combine left over chicken, gravy, corn, green beans, 1 can soup and 1/2 cup of milk.
  • Pour into pie crust.
  • Top the mixture with another pie crust sealing the edges.
  • Cut 4 - 1 inch slits in the top crust.

Cover edge of pie crust with foil, Bake the rest uncovered for 30-35 minutes in a 350 degree oven or until crust is golden brown.

Grilled Margarita Chicken Fajitas

I MADE THIS!
It's a WINNER in my family!


Label a Gallon Freezer Bag "Margarita Chicken" then fill it with your Chicken, Margarita Mix, and Garlic Lemon Seasoning.

Zip the bag and toss it around!

It's that easy.

If you want to eat it today, let the chicken marinate for about 6 hours.

Or you can freeze it for later. I made this by grilling the chicken on medium/low heat on the grill. I grilled it for 5 minutes, then turned the chicken (not flip) turned it to get grill marks going in a different direction for 3 more minutes. Then I flipped it and did the same to the other side and grilled until juices ran clear. About 15-17 minutes. (I like my chicken on the dry side, so cook to your liking!)

Money Saver Tips:

  • Use a can of chicken broth if you don't have Margarita Drink Mix on hand.
  • Buy Chicken Breast when it's on sale or in bulk and make a few of these for the freezer.

Freezing Tips:

  • Label bags before filling with food.
  • Print your recipes out and keep in a folder for quick cooking references (or just bookmark my blog : )
  • If you know you are going use the Crockpot Method to cook your meals, make sure to store the bags in the "shape" of your crockpot! Have you ever tried to put a square object in a circle peg?
  • I'm a big fan of laying my items flat in the freezer and stacking them high, so I have an area for food I know I'll need to thaw and another area with bags that are squished into a rounder shapes that will go in the crockpot.
How did I serve it?
I sliced the chicken breast into thin strips and served them on the large flour tortillas with refried beans, salsa, lettuce and a side of Zatarain's Yellow Rice.

It was so filling that I had a ton left over!

What did I do with my leftovers?
I used the leftover Margarita Chicken and lettuce to make a Chicken Caesar Salad. It was great for lunch and for dinner.

Too cold to Grill? Try these options: (note...I personally have not tried this yet! But if I ever do, I'll be sure to share the results. If you try it, please share with me!)

Baking Method:

Thaw chicken and marinade. Preheat oven to 350 degrees. Pour all contents from bag into a baking dish, cover and bake for 40 minutes.

Slow Cooker Method:
Cut bag and peel off frozen contents. Cook on high 4-6 hours or on low for 6-8 hours.



My favorite yellow rice! It's got a little kick to it but the flavor and rice texture is delicious!

What is "OMG! They Ate It!" Blog going to be about?

I had a Homemade Gourmet Party at my home a few weeks ago. I ended up preparing 4 meals that went into freezer bags and put in the freezer.

I almost have no idea what they will taste like with the exception of one that I have had but not with chicken!

My goal is to try them, get reviews and blog about them. I REALLY want be able to throw a few items in a freezer bag, freeze it and have it available for all those times when my life is so hectic that dinner becomes a chore to do. Most of the meals you can either thaw and grill it, thaw and bake it or stick it frozen right into your crockpot!

Okay...let's get cooking.
